You can try the newest indie title, Valheim. Up to 10 player coop it seems. Can't wait to get it later this month.

Valheim is surprisingly fun if you have a few friends to play with, or if you are really into survival crafting games in general

The studio that is developing Valheim is also working on another game, and has been for a few years, called Satisfactory. It's open world survival crafting with heavy automation. Basically you can make factories that span the entire surface of the planet, or at least the entire area that you're working with.

ARK: Survival Evolved is a lot of fun with friends, especially if you can agree on some mods to spice things up. It's poorly optimized, so many people will choose others instead.

7 Days to Die is another fun one; survival crafting mixed with actually decent zombie killing, including mechanics regarding stealth, hunting, etc. You can even set a game not to spawn enemies if you just want to hang out and mess with the other mechanics first, and it's pretty easy to mod to fit your desired difficulty level.

Or if you're strapped for cash, Unturned is a free to play survival crafting game, open world but not nearly as large maps, basic graphics, but good mechanics underneath it all. It's easier to run on lower-end machines and doesn't cost a dime to play, so it's pretty accessible, and if you don't like it, at least you didn't sink any money into it.
