having internet troubles lately & can't really do online multi-player anymore. I've been playing a lot of Metal Gear Solid V & Elden Ring. What are the essential single player/offline games for you guys?

If you haven't you should try Sekiro. It's pretty challenging and I'd say is a great single player game. A few other single player games that I've recently gotten into and found to be fun are Trepang 2, Shovel Knight, Cuphead, Red Dead Redemption 2, Vampire Survivors, and the Amnesia games.

I don't know if it's best for everyone as offline game but I just do Minecraft with hardcore mode when I'm playing with no internet. Soul Games such as Dark Souls and Elden Ring are hard for me, kind of I have skill issue.
