I've been playing around with a few game engines, and my favorite so far is Godot, but there haven't been any popular games yet that used it. Would you check to see if a game was made with a more proven engine (Unity, Unreal), or does it not matter to you?

It doesnt matter in my opinion. You will learn how to make game then you can transfer your knowledge between engines easly.

Not typically, I tend to only worry about the engine it was made with if I'm having significant issues with the game in question.
