it always depends on the genre, here are some of my personal favorites

action - fullmetal alchemist: brotherhood
thriller - parasyte: the maxim
slice of life - march comes in like a lion
romance - spice & wolf
drama - oshi no ko

The one that got me hooked was death note. Attack on titan is my favorite ever but you may want to build up to that one. Naruto is a good one for some easy fun if youve go the time on your hands.
