Fairy Tail is really good, aside from one of the filler arcs (but then again, what long anime doesn't have a lousy filler arc?). GunXSword was one of the first series I watched, though it's really just the one season. And my favorite of all time is still Restaurant to Another World, but again, just once season there, and not a long one.

Lots of hype sequels right now (AoT, Re:Zero, Beastars etc.). Horimiya, Mushoku Tensei, and Wonder Egg Priority are some non-sequels that are worth checking out imo.
