Fallen Order definitely scratched the itch for me. Play on the higher two difficulties if you want a more souls like experience

Hollow Knight if you don't mind a souls-metroidvania hybrid. I highly recommend it - looks and sounds great, gameplay is challenging but fair and it has a bunch of free DLCs that easily makes the game last 30+ hours.

I think fallen order was the best intro for normal player. it got exploration, parkour and battle, but it really lacks key rpg moment like make your own buid and fighting approach.
