I would say Neon Genesis Evangelion, but that's sort of "cheating", the Mechas there are almost an excuse for the rest of the compelling coming-of-age-end-of-the-world story

Yeah NGE is still a great watch so long as you watch The Fall  of Evangelion as the ending to the show. I've heard really good things about the rebuilds though, they're far more centered around cool mech fights.

Mobile Suit Gundam has a lot of good stories in its 40ish years of history.

I agree with the other poster, check out Gurren Lagann. It's one of my favorite series.
