Simpsons Hit and Run was my absolute favorite. The missions and stuff was great but it was even better when you used those ingame cheats to mess around.

Eternal Darkness. That game was a wild experience with the sanity meter that fucked with you so hard at the highest level the game would give you fake deaths and rooms that you explore only to find they were fake and you never left the previous room.
