I mean sure root vegetables are great for roasting and you can never go wrong with an oven roasted potato, but i dont feel anything changes its character in the oven quite like a tomato

I never roast vegetables. Stir fry all the way, way faster too.

I always thought of roasting carrots in the oven and the putting honey on them. seems like it would be tasty
