Mario Cart is always pretty good, same with Mario Party. Diablo 3 on Switch i hear is good for coop but dont know your roommate to say if they would like it. Luigi's Mansion 3 also a good choice

I’m playing Towerfall on switch with my roommates that are not big player and we always have a blast.
Very easy to pickup the control and everybody can be good at it after 10min of playing
