Have you tried any games where you weren't expecting it to be fun but it surprisingly was? One example that comes to mind is geoguessr, very simple concept of just placing you in a streetview scene and you guess where you are but its actually pretty fun

A few years ago I got Death Stranding for free on Epic Games and didn't know a whole lot about it, only that it's basically a walking simulator. When I played it though I realized that I actually enjoyed just climbing mountains and driving through deserts. 
I have to admit, the pacing of the story isn't always great and combat isn't perfect, but I liked the atmosphere of the game a lot more than I'd expected.
