Heterogeneity vs homogeneity in food

Which do people prefer more? For foods like mashed potatoes and gravy, there are people who mix the gravy and mash until it becomes one thing. I feel like things like this end up less than the sum of its parts, and foods taste much better unmixed.

Doesn't it depend severely on the dish? In general though, leaving things unmixed is better so people can choose for themselves if they mix it or not. Also just looks more appealing.
