There are so many fields in IT, such as cyber security, data science, software development, devops, blockchain, etc. and it's difficult to have thoroughly tried them all isn't it?
In theory you can try out every field in IT but this would take a lot of time you could use to specialize in a certain field. Just pick something up you are interested in until you may think it's time for something different. For me myself software development is the most interesting one so i focused on this field. You can also combine some fields to benefit from each aspect of the fields. So feel free to try some fields and try to always learn something new to not get rusty.
Play around with everything, and figure out which you like best. If you choose one and you realize later that you don't like it, it won't be too hard to switch to another field.
I played around with a bunch of stuff when I was young. Eventually I just found myself leaning more in to software development stuff, but I do also like other fields and have held jobs in them as well. I probably fit into the jack of all trades, master of none crowd.
In the beginning you're going to do a little of everything anyway, unless you get a very specilised internship, but that's unlikely.
Eventually you will stick with what you liked the most.
Some graduate programs let you rotate through a variety of different roles and that can be useful.
Things to think about is the sustainability of the field. Tech is always moving forward but some parts are faster than others. Also good to think about how easy it is to change roles because you don't want to be stuck in some ops job unable to move because you can't code.
