Vagabond is interesting to read but imagining the manga to be adapted to an anime is quite hard.

Claymore is way better as a manga. The anime stops in a weird place so there’s way more to the story in the manga.

One Piece. The manga doesn’t have all of the dumb time filler flash backs. That’s enough reason for me.

Berserk. Seriously outside of the original anime that aired in 97 which did a decent job at adapting the manga none of the recent adaptations have done it well. Unfortunately with how the anime industry is no company wants to invest the time and money into properly adapting it.
