I watched season 1 and it was slow but I thought it was enjoyable. However, with season 2, the pace really picks up and I literally have no idea what I'm even watching and can't process what's going on plot wise. Will rewatching make more sense or should I just read the manga?

The manga is better than the anime, definitely. However, it still is very confusing and I wouldn't really recommend it.
