Why is being stuck in tutorial loop seen as a bad thing?

Personally I learnt quite a lot from following project tutorials as I get to explore different ways of approaching a project.

You need to try out other things like actually do something different to it like change the code a bit to make you progress faster

There is nothing wrong with tutorials, but to really learn coding you have to figure out how to use and apply it yourself and tutorials don't really help with that. You need actual experience messing around

Tutorials usually only scratch the surface of a topic/techology. To improve you need not only practice but a focus in understanding how things work at a deeper level, which is something that tutorials won't really cover

Tutorials are like armbands or training wheels.

Great to start off with but eventually you'll be dropped in the ocean and you'll realise that what you thought was swimming was actually you just being kept afloat.
