Does anyone here have experience with using wide screen monitors (21:9) with old games? Will the screen be cut off or will there just be black bars?

Depends on your video card and drivers but usually just black bars.
Sometimes depending on the game it may also stretch the content, which would look terrible on the ultra-wide ratio you're describing.

If you are lucky, there might be an unofficial patch or fix that might make the game work better for those resolutions.
If you google WSGF, you can search for your game and see if it has some kind of fix making it work in widescreen.
