The first plot twist movie I can remember watching, and enjoying very much, was The Prestige (2006). A really brief summary would be: two magicians turn rivals as they compete to be the “Greatest” with a tainted past (one of the magician’s wife dies during a performance where both magicians were participating in, drowning).

The undoing. A plot twist in your own mind. Really good the way they wrote it doubting at the end of every episode.
